Ache of absence, feast of meaning
Coeliac disease and Lebanese heritage intersect in a journey of longing, loss, and adaptation. The absence of traditional flatbread changes how meals are experienced. Foods once savoured by hand, tearing warm, fragrant bread, are now eaten with a spoon – an imperfect substitute for a beloved staple that carried history and comfort. This shift can feel isolating, as if a thread between past and present is severed. Yet, cooking for others becomes an act of love and resilience, honouring heritage while embracing change. Feeding, in these moments, transcends the physical, becoming a profound expression of connection and care.
